Cherries ripen in 7-9 months. High-quality Arabica is often hand-picked for ripeness, while Robusta is frequently harvested mechanically.

Wet Processing: Cherries are pulped, fermented, washed, and dried.
Dry Processing: Whole cherries are dried in the sun before the outer layers are removed (traditional for Robusta).

Green beans are heated (370Β°F - 540Β°F) to caramelize sugars and develop aromas. Profiles include Light (original flavors), Medium (balanced body/acidity), and Dark (bold flavor, low acidity).

The Art of Brewing

After roasting, beans are ground according to the brewing method to perfectly extract flavors and compounds.
